Ricotta Salata
This distinctive ricotta is called "The Easter Cheese" or “Basket Cheese” of Southern Italy. Locatelli Ricotta Salata can only be made from the first sheep's milk whey in January and February. Aged three months, the first Ricotta Salata is ready for eating shortly before Easter each spring. It is snowy-white with a creamy texture, but acquires a more solid texture if aged beyond five months.

Locatelli Brand Ricotta Salata is known in Italy as a very healthy food, thanks to its high protein content. It is delicious with pasta, antipasto or in salads.
