Locatelli Pecorino Romano Italian Fries

5  russet potatoes
1/4 cup  olive oil
1/2 cup  grated Locatelli Pecorino Romano Cheese
1/4 cup  chopped parsley
Preheat the oven to 400 degrees F.

Peel potatoes and cut into 1/2-inch thick fries. Place the potatoes into a pot with cold water seasoned with salt. Bring up to a boil and simmer until almost cooked through.

Drain carefully and put in a bowl. Add olive oil, toss well and lay out in a single layer on a baking sheet. Bake until golden brown.

When brown, sprinkle with grated Locatelli Pecorino Romano Cheese and continue to bake until crispy and the cheese is melted, about 5 to 6 more minutes. Remove and let cool. Top with chopped parsley and serve.
