Grilled Halibut with Herbs and Ambriola Pecorino Romano Cheese

pounds Halibut Fillet

teaspoon Thyme (Finely minced)

teaspoon Oregano (Finely minced)

Basil Leaves (Finely minced)

cup Ambriola Pecorino Romano Cheese (Grated)

tablespoons Olive Oil (Salt and Pepper to taste)
PREPARATION
Preheat oven to 450 degrees.
Coat the halibut with 2 tablespoons olive oil and then add salt and pepper. Place on baking sheet and bake for approximately 10 minutes, or until opaque in the center.
Mix the herbs, 2 tablespoons olive oil, salt, and pepper. Spoon herb mixture on top of each fish to cover evenly. Sprinkle grated Ambriola Pecorino Romano Cheese on top of each fish and pat down lightly to adhere. Return to the oven and bake for 10 minutes or until cheese is crisp.
